How secure is VDS. For instance. can a person catch the varibles that are being passed within the VDS app?

If so is their a way to defeat this.

The only answer I have for you is that it depends... If you like you can send me a private message and we can discuss the security of VDS but I don't think we want to put all our dirty laundry out here in the public forums.
